Popcorn Coated Marshmallows!

These little pieces of heaven were hell to make! They took hours of hard work, and the fact that it was my first time working with the stomach clenching pork gelatine didn't help! Just as well they were so delicious! 


I had the crazy idea to make these just after my parents came back from a delicious meal at Penny Hill Park. They brought back some tiny marshmallows coated in popcorn. The minute I saw them, I knew they were a must-make! 


When I finally plucked up the courage to make the little devils, It happened to be the day Hannah was round, of course making the fun double! The day began with the melting of the sugar and the water, soaking the gelatine etc. I honestly have never felt more sick in my life. After one whiff of the soaking fat we were literally so close to resorting to a peg on our noses. 


We were soon whisking away, and although we stood for ages, it didn't seem to thicken. We poured it into the tray anyway and put it in the fridge.


About three-ish hours later, they immersed from the fridge. To touch, they seemed firm yet squidgy. Perfect! But OMG they took sooooo long to get out of the blooming tray. I tried all methods but they just wouldn't come out. Eventually the soft white slab slipped out onto the granite surface covered in icing sugar and Phase 2 began.

I had to hand peel the gelatine, which had all soaked to the bottom of the slab, off carefully, and chucked the revolting stuff in the bin. Then I sliced it into about three centimetre cubes, and begun the fun stuff.

I made some popcorn and crushed it. I then dipped 4 sides of the cubes into the popcorn, and the other two into icing sugar. Popped them on a plate and Hey Presto! DONE!

My family of critics enjoyed them very much, and if you want to make them yourselves just get the marshmallow recipe from the GoodFood website (It says your meant to put them on skewers on their website- ignore that!) and then just do the rest like I've said :)
